Production and refinement

The Les Grand Champs vineyards have an average age of about 15 years and are planted on typical Burgundian soils, capable of imparting finesse and aromatic complexity to Pinot Noir. Vineyard management is focused on fruit quality, with hand harvesting that allows for careful selection of clusters at full ripeness. The aim in the vineyard is to obtain healthy, balanced grapes capable of faithfully expressing the character of the climat of origin.

In the cellar, the grapes are destemmed and undergo a cold maceration of about one week, essential for extracting the most delicate varietal aromas. This is followed by an alcoholic fermentation lasting 15–20 days at controlled temperature, then malolactic fermentation, which softens the structure. Aging takes place for about one year in traditional oak casks, which help integrate the aromatic profile without overpowering the fruit.

Domaine Piguet Chouet

The history of Piguet-Chouet is deeply rooted in the heart of Burgundy, tracing a path from 1360 to the present day. For many generations, the Chouet and Piguet families have cultivated their vineyards, tending their Meursault and Auxey-Duresses crus with passion and dedication, passing down knowledge and traditions from father to son. In 1981, the marriage of Anne Marye and Max gave rise to Piguet-Chouet, a union that harmoniously combined modernity and tradition, continuing to highlight the region and its historic grape varieties.

Among the family’s jewels stands Volnay, regarded as the most feminine of the wines from the Côte de Beaune, celebrated for the softness and elegance of its tannins, perfectly embodying the winery’s philosophy: “an iron hand in a velvet glove.” Today, Piguet-Chouet continues to produce wines that express finesse, complexity, and depth, honoring the history of its vineyards and the natural vocation of each terroir.

The pedoclimatic conditions of Burgundy, combined with the special savoir-faire of the vigneron, due to centuries of high-quality agronomic practices, result in a unique terroir. The care and specificity extend in this region to the definition of "climat," recognized by UNESCO. More selective than terroir, it refers to a single vineyard with specific characteristics of soil, climate, exposure, and cultivation methods.

The vineyards of Burgundy stretch for about 250 km from Chablis in the north to the Mâconnais, bordering the Rhône Valley, in the south.

The climate of Burgundy is predominantly continental, with slight maritime influences in the western area and Mediterranean influences in the southernmost part. Winters are cold, with fairly frequent frosts, sometimes even in spring; rainfall is minimal during the vine's budding period but intense between May and June, which can compromise flowering and thus the harvest.

The soil of Burgundy is formed from marine sedimentations mixed with limestone, marl, and clay, with limestone prevailing in the Côte d'Or, from Dijon to Chagny.

Côte de Beaune

The Côte de Beaune is an extraordinary region, stretching 26 km from Ladoix-Serrigny to Santenay. This region boasts a unique balance between Chardonnay and Pinot Noir grape varieties, with Chardonnay predominating in the Côte des Blancs and Pinot Noir more prevalent around Beaune and further south.

The diversity of the terroir in the Côte de Beaune is reflected in its wines, which represent some of the finest expressions of Chardonnay and Pinot Noir in the world.
