Production and refinement

The production of Vino Nobile di Montepulciano DOCG – Il Conventino originates from vineyards situated at around 400 meters above sea level, on clayey and tuffaceous soils typical of the Montepulciano area, which provide the wine with structure and complexity. The grapes, mainly Sangiovese (Prugnolo Gentile) with small percentages of Colorino, Canaiolo, and Mammolo, grow in carefully tended vineyards with controlled yields not exceeding 60 quintals per hectare. Harvesting is strictly by hand, selecting the best clusters to ensure the highest quality.

In the winery, the grapes are gently pressed and undergo fermentation in stainless steel vats at a controlled temperature for 10–15 days, with skin contact to extract color, aromas, and tannins. Aging takes place for over 24 months in large Slavonian oak barrels, followed by at least 6 months of bottle aging, achieving a harmonious balance between structure, aromatic complexity, and softness.

Il Conventino

Azienda Agricola Il Conventino is located in Montepulciano, in the heart of Tuscany, among the gentle hills connecting the Val di Chiana and the Val d’Orcia. The area has a long-standing viticultural tradition dating back to the Etruscan period, consolidated in the Middle Ages, and already regulated in the 14th century with precise rules on wine production and trade.

Il Conventino spans approximately 10 hectares, with vineyards situated between 250 and 580 meters above sea level. The winery was founded with the aim of preserving the local winemaking tradition, combining respect for the environment with careful attention to grape quality. The company philosophy focuses on organic production, avoiding industrial standardization and favoring artisanal and sustainable methods.

Il Conventino

The estate pays particular attention to vineyard yields, limiting them to 60 quintals per hectare to obtain grapes that are concentrated and aromatically intense. Fermentation and winemaking follow traditional methods, with controlled macerations and aging in oak barrels, allowing the wines to develop structure, elegance, and longevity.
