Production and refinement

The grapes for Vernaza Belle Brut Nature are trained using the Guyot system, with a yield of about 80 quintals per hectare. The harvest is carried out by hand, with the grapes collected in small crates and carefully selected directly in the vineyard, ensuring that only the best clusters reach the cellar. This artisanal approach enhances the quality of the grapes and the wine’s aromatic purity.

After harvesting, the grapes undergo gentle pressing with destemming, and the must ferments as a white wine at controlled temperature to preserve freshness and primary aromas. A double fermentation follows according to the Traditional Method, with aging on the lees for 24 months and no added sugar (Brut Nature), thus maintaining maximum elegance and purity of the fruit.

Ferrai

The Ferrai Farm, run by the Ferrai family, is located in the only area where the Valsugana wine zone widens, on the slopes that descend from the Brenta River down to the village of Telve. This small winery is the result of a blend of passion, dream, and strong family ties, carefully overseeing every stage of production, both in the vineyard and in the cellar, in order to produce artisanal wines that are as natural as possible.

The territory gives the wines unique characteristics: the vineyards benefit from a particular climate and from gravelly soils derived from the schistose metamorphic rocks typical of the Lagorai range, stony, well-drained, and of medium fertility, which favor the aromatic expression and minerality of the wines.

Ferrai

Across its 2.5 hectares of vineyards, the estate mainly cultivates traditional varieties, both white and red, preserving some extremely rare pre-phylloxera grapes that still exist. Among these stands out the native variety Vernaza Zinesa, saved from extinction thanks to the care and attention of the Ferrai family. Production is intentionally limited and artisanal, with about 9,000 bottles produced annually, a testament to rigorous selection and high quality.

The company philosophy is reflected in the “Vini dell’Angelo” project, with sparkling wines and dry wines that highlight the characteristics of local grape varieties and tell the story of the identity of the Trentino territory, combining tradition, sustainability, and respect for nature.

Trentino Alto Adige

Trentino Alto Adige is a region entirely mountainous and divided into the autonomous provinces of Trento and Bolzano, whose border marks a linguistic and administrative watershed.

The attention of wineries and heroic viticulture ensures a consistently high quality level of wines, and particularly the best results are achieved with grapes that thrive in cold climates, such as Sauvignon and Pinot Noir, which here express their varietal characteristics at their best. In addition to the many international varieties, the region also boasts an interesting heritage of native grapes, including Teroldego, Schiava, and Lagrein.

Although it would be difficult to draw a morphological boundary between the two areas geographically, ethnic and linguistic differences on one hand and pedoclimatic differences on the other have also led, over the centuries, to a provincial characterization of wine production.

Both areas, however, share an excellent wine production, thanks also to the geographic position and favorable climatic conditions along the Adige Valley and on the slopes of the mountains that line it, as well as in the flat and hilly areas around Trento and Bolzano.

Trento

The Trento area, in addition to its Trento DOC sparkling wines, is famous for its elegant white wines, typical of grape cultivation in high-altitude terrain.

This territory is distinguished by elegant wines that express a unique concept of territoriality. The success and peculiarity of Trento DOC sparkling wine are due precisely to the characteristics of the territory: the combination of climate, different altitudes, terrain, and Trentino know-how make it not just a simple sparkling wine, but a highly esteemed mountain sparkling wine, increasingly recognized and awarded.

Despite its small size, the Trentino region is covered with 10,000 hectares of vineyards, with a percentage of grapes destined for sparkling wine production accounting for 8% and an annual production of 7 million bottles.

The vineyards benefit from different climates: from a mountain microclimate to the milder one of Lake Garda. Factors such as vineyard altitude and temperature variation play an important role in grape ripening, influencing the organoleptic characteristics of the wines.

The varieties cultivated for Trento DOC sparkling wine are Chardonnay and Pinot Noir. The area of organic vineyards in Trentino is steadily increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards product healthiness.

Trentino, the homeland of Trento DOC bubbles, offers elegant and unique white wines, the result of cultivation in high-altitude areas and Trentino know-how, expressing the richness of the territory in every sip.
