Production and refinement

The grapes come from spur-pruned vineyards, grown on medium-textured, highly calcareous soils, with yields between 60 and 80 quintals per hectare. The Sicilian exposure and microclimate provide the Nero d’Avola grapes with optimal ripening and intense aromas. Harvest takes place at the end of August, with handpicking and careful selection of the grapes to ensure quality and integrity of the fruit.

Winemaking involves destemming followed by a short cold maceration at 6–8°C, then gentle pressing and fermentation at a controlled temperature between 14 and 16°C. Part of the wine undergoes malolactic fermentation to harmonize structure and acidity. The sparkling wine ages in the bottle for at least 24 months on the lees, following the Traditional Method, to develop finesse, persistent perlage, and aromatic complexity.

In the glass, it shows a bright, medium-intensity rosé, with a fine and persistent perlage that captivates the eye.

Olfactory examination

On the nose, it releases fragrant aromas of strawberries, raspberries, and mulberries, enriched by a citrus note that lends freshness and vibrancy.

Curto

The Curto family has passed down its passion for viticulture for over three and a half centuries, since 1670, cultivating and caring for its vineyards from generation to generation with dedication and respect for the Sicilian territory. The modern estate was established at the end of the 1700s and is beautifully set within the historic Villa Sulla, surrounded by vineyards, orange groves, olive groves, and carob trees, framed by the ancient dry stone walls of the County of Modica and encircled by numerous necropolises. Today, Francesca, a descendant of this historic family, leads the estate with determination and a highly contemporary vision, where the main challenge is managing climate change while optimizing vineyard and water management, following principles of sustainable viticulture.

Curto

Her focus is on enhancing the elegance and authenticity of Nero d’Avola in all its expressions, while maintaining a strong connection to the tradition and history of this land. The estate’s vineyards cover 20 hectares, forming the foundation for the quality and character of the wines produced.

Sicilian wine territory is now considered a true continent, thanks to its pedoclimatic variability and rich biodiversity. It is located in the center of the Mediterranean and in the so-called "northern sunbelt," an area between the 30th and 50th parallels north and the 30th and 40th parallels south, where the best conditions of brightness and temperature for vine cultivation are found.

On the smaller islands, given the high temperatures and windy conditions, the typical training system is the "alberello" and its "mixed" versions (for example, on the island of Pantelleria), as well as the "Tendone" system. In the rest of Sicilian territory, however, more than half of the vineyards use espaliers and contre-espaliers. In Sicily, wines with a long history are born, such as Marsala, but also fragrant dessert wines like Passito di Pantelleria and Malvasia delle Lipari, not to mention Moscato di Noto and numerous robust red wines and interesting white wines. There's also Nerello Mascalese, climbing the slopes of Mount Etna.

Val di Noto

The Val di Noto is characterized by a unique terroir: it ranks first among the sunniest territories in Sicily and is the second windiest area in the region, after Trapani.

The white calcareous soils play a significant role. In fact, Nero d’Avola, Moscato, and Grecanico wines produced here acquire a special character, precisely due to the calcareous soils that allow for beautiful structures and longer aging, providing longevity and elegance to the wines.

The Noto DOC denomination covers red and white wines from Moscato grapes produced in the southern part of the province of Siracusa in eastern Sicily, particularly in the municipalities of Noto, Rosolini, Pachino, and Avola.

The Val di Noto, kissed by the sun and refreshed by the winds, offers a unique terroir in Sicily, characterized by calcareous soils that impart character and elegance to Nero d’Avola.
