Production and refinement

100% Sauvignon Blanc, sourced from several parcels in the Maimbray area. The vineyards are planted on clay-limestone soils, with the Kimmeridgian limestone bedrock typical of the region. This type of soil contributes to the wine’s mineral character and palate tension. The vines are approximately 30 years old on average, with a planting density of around 8,000 vines per hectare, trained using the Guyot system.

Viticulture is sustainable and based on organic principles. The rows are grassed with species such as fescue and poa, which are mown twice a year. An organic fertilizer is applied at the beginning of the season, while toward the end of the season treatments are limited to Bordeaux mixture and sulfur. The stated yield for this wine is approximately 60 quintals per hectare. The grapes are harvested by hand at optimum ripeness, with particular attention paid to bunch selection.

The winemaking is focused on preserving the freshness and aromatic expression of Sauvignon. The grapes are harvested by hand, carefully selected, and then gently pressed using a slow, soft pneumatic press. Fermentation takes place in temperature-controlled stainless steel tanks at low temperature, using neutral selected yeasts. The different Sauvignon parcels are vinified separately and subsequently blended to achieve the characteristic balance of Terre de Maimbray.

The wine is aged on fine lees in stainless steel for six months, without bâtonnage. Bottling takes place the following spring.

Reverdy

Domaine Pascal et Nicolas Reverdy was established within a family with generations of ties to Maimbray, a small village surrounded by the limestone hills of Sancerre. The estate took its current form in 1985, when Pascal Reverdy took over the family business; from 1993, he was joined by his brother Nicolas. Together, the brothers expanded and enhanced the vineyard holdings, replanted several parcels, restored historic farm buildings and converted them into a winery, and developed the commercial distribution of their wines.

Following Nicolas’s accidental death in 2007, his wife Sophie joined the estate. Pascal’s sons, Victorien and Benjamin, subsequently became part of the domaine as well, bringing experience gained at leading French wine estates. Today, the winery has approximately 11 hectares planted with Sauvignon Blanc and 3 hectares with Pinot Noir, with production focused on Sancerre appellations. The estate’s philosophy places great importance on vineyard work, careful attention to individual parcels, and preserving freshness and varietal purity.

Loire Valley

The Loire Valley is one of the largest and most interesting wine regions in France, located west of Burgundy: here, viticulture is practiced right along the namesake river. Various types of wines are produced, including whites, reds, rosés, sparkling wines, and even sweet wines. The Loire is especially famous for its excellent white wines, particularly from Sauvignon and Chenin Blanc grapes, though it also has a noteworthy production of red wines, mainly based on Cabernet Franc and Gamay.
The Loire Valley is also famous for Muscadet, a wine renowned for its ideal pairing with shellfish, made from the Melon de Bourgogne grape, which is called Muscadet in this region.

The climate in the Loire Valley is generally quite cool; both the temperature and the latitude place the region almost at the limit for the survival and cultivation of vines. This results in a particularly low sugar content in the grapes, producing wines that are light, low in alcohol, and characterized by high acidity. When barrels are used for maturation, the outcome includes robust wines with toasted notes, features that differ from what can be considered the classic styles of the region.

The region stretches along the course of the Loire River, the longest in France. The most suitable areas start from the cities of Nevers, Bourges, and Orléans. From these territories come the most famous wines of the region: AOCs such as Sancerre, Pouilly-Fumé, Vouvray, Savennières, Quarts de Chaume, Montlouis, Chinon, Bourgueil, Menetou-Salon, and Muscadet. The most important area of the Loire Valley is in the north, itself divided into three zones: one more westerly, near the Atlantic coast (around Nantes), where the AOC Muscadet is found, a central one with the AOCs Anjou-Saumur and Touraine, and an eastern one (south of Orléans), with the AOCs Sancerre and Pouilly-Fumé. The production in the two outer areas focuses on white wines, while in the central area the production is varied, with whites, reds, rosés, sparkling wines, and sweet wines made from grapes affected by Botrytis Cinerea. The Loire Valley also has a vast area of Vin de Pays production.

Sancerre e Pouilly-Fumé

Sancerre and Pouilly-Fumé are two of the most prestigious French wine denominations. These wine regions are located in the "central vineyards" of France, a region extending south of Orléans, up to the cities of Bourges and Nevers. Here, Sauvignon Blanc finds its ideal habitat, producing wines with unique and distinctive characteristics.

Sancerre is renowned for its refined Sauvignon Blancs, known for their lively acidity and complex aromatic notes. The vineyards in this area grow on soils rich in gypsum and flint, imparting a distinctive minerality to the wines. Parcels such as Le Grand Chemarin, Chêne Marchand, and Clos de la Poussie are emblematic examples of the terroir that contributes to the production of some of the finest Sancerre wines. In addition to whites, Sancerre is the only area in the region where red and rosé wines are also produced, made from Pinot Noir and Gamay grapes.

Not far away, on the eastern bank of the Loire River, lies Pouilly-sur-Loire, home to the famous Pouilly-Fumé. This wine derives its name from the characteristic smoky notes ("fumé" in French) attributed to the limestone soils on which the vines grow. These soils, rich in flint, give the wines an aromatic profile that ranges from minerality to a subtle smokiness, making Pouilly-Fumé a unique sensory experience.

In addition to Sancerre and Pouilly-Fumé, the central vineyards include other important denominations such as Menetou-Salon, Quincy, and Reuilly. In these AOCs as well, Sauvignon Blanc is the undisputed star, and the wines produced retain the elegance and freshness that characterize the entire region.
