Production and refinement

Marzemino is grown on loamy-clay soils in vineyards trained with the double pergola system, with a limited yield of 50 quintals per hectare. Harvesting is done by hand at the end of September. After picking, the grapes are left to dry in a fruttaio for two months to concentrate sugars and aromas.

Vinification involves fermentation in stainless steel for about twenty days, followed by 24 months of aging in oak and cherry wood barriques, custom-made for this wine, and additional months in the bottle. This long process gives the wine complexity, roundness, and excellent aging potential.

On the nose, intense fruity aromas of sour cherry, ripe cherry, blackberry, and blackcurrant emerge vividly, set against a backdrop of garrigue and vanilla, with undergrowth accents that enrich its extraordinary aromatic complexity.

Tasting

On the palate, it is full-bodied, warm, and enveloping, with well-integrated tannins and long aromatic persistence. The structure is fleshy and rounded, yet highly elegant.

Salizzoni

Salizzoni: an unmistakable style, a life mission. This Trentino-based winery, with profound dedication, cultivates its own vineyards in Alta Vallagarina, producing wines of great character, among which Marzemino and Moscato Giallo stand out. Valter and Luca, driven by relentless passion and contagious enthusiasm, work diligently to create wines that embody elegance and personality.

Salizzoni

The winery is located at Palazzo Valentini, an ancient noble residence dating back to 1696, in the heart of the historic village of Calliano, in the province of Trento. As early as the late 19th century, renowned wines were produced here, including the famous Champagne Valentini.

Trentino Alto Adige

Trentino Alto Adige is a region entirely mountainous and divided into the autonomous provinces of Trento and Bolzano, whose border marks a linguistic and administrative watershed.

The attention of wineries and heroic viticulture ensures a consistently high quality level of wines, and particularly the best results are achieved with grapes that thrive in cold climates, such as Sauvignon and Pinot Noir, which here express their varietal characteristics at their best. In addition to the many international varieties, the region also boasts an interesting heritage of native grapes, including Teroldego, Schiava, and Lagrein.

Although it would be difficult to draw a morphological boundary between the two areas geographically, ethnic and linguistic differences on one hand and pedoclimatic differences on the other have also led, over the centuries, to a provincial characterization of wine production.

Both areas, however, share an excellent wine production, thanks also to the geographic position and favorable climatic conditions along the Adige Valley and on the slopes of the mountains that line it, as well as in the flat and hilly areas around Trento and Bolzano.

Trento

The Trento area, in addition to its Trento DOC sparkling wines, is famous for its elegant white wines, typical of grape cultivation in high-altitude terrain.

This territory is distinguished by elegant wines that express a unique concept of territoriality. The success and peculiarity of Trento DOC sparkling wine are due precisely to the characteristics of the territory: the combination of climate, different altitudes, terrain, and Trentino know-how make it not just a simple sparkling wine, but a highly esteemed mountain sparkling wine, increasingly recognized and awarded.

Despite its small size, the Trentino region is covered with 10,000 hectares of vineyards, with a percentage of grapes destined for sparkling wine production accounting for 8% and an annual production of 7 million bottles.

The vineyards benefit from different climates: from a mountain microclimate to the milder one of Lake Garda. Factors such as vineyard altitude and temperature variation play an important role in grape ripening, influencing the organoleptic characteristics of the wines.

The varieties cultivated for Trento DOC sparkling wine are Chardonnay and Pinot Noir. The area of organic vineyards in Trentino is steadily increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards product healthiness.

Trentino, the homeland of Trento DOC bubbles, offers elegant and unique white wines, the result of cultivation in high-altitude areas and Trentino know-how, expressing the richness of the territory in every sip.

Recommended pairings and dishes

Matching by concordance

The aromatic strength of this wine — built on dark fruits, sweet spices, and vanilla — pairs perfectly with equally intense and layered dishes. Its long-lasting taste and aroma find coherence in complex, slow-cooked preparations with rich bases, such as braised meats, and in dishes where the sweet-savory contrast is intentional. The wine’s warmth should also match the richness and structure of the dishes, creating a full and satisfying harmony.

Matching by contrast

The balance is built between the richness of the dish (as in liver or rich stews) and the freshness, alcohol content, and tannins of the wine, which cleanse and at the same time enhance the tasting experience. One can play with any sweet tendency (apples, figs, balsamic reductions) that contrasts with the dry, savory structure and the clean finish of the wine.

It pairs well with

Hearty meat-based dishes such as braised or roasted preparations with sweet, spiced, or sweet-and-sour notes — including veal liver with apples, onions, and balsamic vinegar, or lamb stew with chickpeas and dried figs; autumnal recipes featuring game, mushrooms, or duck and goose meat; aged and complex cheeses.

Braised beef is a cornerstone of Piedmontese cuisine, savory and succulent with complex aromas. For an elegant touch, cook it in the same wine you will be serving.
