Production and refinement

In the vineyards of Il Conventino, located at 350–400 meters above sea level, the grapes thrive on clay and tuff soils that impart both structure and finesse. The estate cultivates only native varieties — Sangiovese, Canaiolo, Colorino, and Mammolo — across roughly 20 hectares managed under certified organic farming.
Yields are deliberately kept low (no more than 60 quintals per hectare) to enhance concentration and express the true character of the terroir.

Vinification takes place in stainless steel vats at a controlled temperature (28–30 °C), with a 15–18 day maceration on the skins. After malolactic fermentation, the wine ages for 30 months in 50 hl Slavonian oak casks, followed by 6 months in second- and third-use barriques, and a further 6 months in bottle before release.
The result is a Nobile di Montepulciano with a balanced profile, combining the power of Sangiovese with the softness and elegance conferred by its long oak aging.

Il Conventino

Azienda Agricola Il Conventino is located in Montepulciano, in the heart of Tuscany, among the gentle hills connecting the Val di Chiana and the Val d’Orcia. The area has a long-standing viticultural tradition dating back to the Etruscan period, consolidated in the Middle Ages, and already regulated in the 14th century with precise rules on wine production and trade.

Il Conventino spans approximately 10 hectares, with vineyards situated between 250 and 580 meters above sea level. The winery was founded with the aim of preserving the local winemaking tradition, combining respect for the environment with careful attention to grape quality. The company philosophy focuses on organic production, avoiding industrial standardization and favoring artisanal and sustainable methods.

Il Conventino

The estate pays particular attention to vineyard yields, limiting them to 60 quintals per hectare to obtain grapes that are concentrated and aromatically intense. Fermentation and winemaking follow traditional methods, with controlled macerations and aging in oak barrels, allowing the wines to develop structure, elegance, and longevity.

Today, Il Conventino represents a perfect synthesis of tradition and innovation: a place where the history of winemaking meets a passion for pursuing quality, respecting the land, and enhancing native grape varieties. The wines express identity, heritage, and a deep connection with Tuscany and its hills.

Tuscany

Tuscany is one of the most important Italian regions for wine, famous worldwide for its renowned labels. Here, wine truly has been part of history and culture for centuries, as far back as the 14th century with the establishment of the "Lega dei Vinattieri" (Wine Merchants Guild).
The Tuscan landscape also tells the story of the territory's strong winemaking vocation: from the hills of Chianti and the Etruscan Coast to the panoramas of Val d’Orcia and Val di Chiana, kilometers of splendid vineyards stretch out before our eyes, producing excellent wines.

Tuscany is one of Italy's most suitable regions for the production of quality wines and has conquered world markets since the 1980s. Bathed by the Ligurian Sea and the Tyrrhenian Sea, it has predominantly hilly terrain with a temperate climate, mild winters, and cool summers.
The various types of grapevines cultivated in Tuscany are greatly influenced by the soil on which they grow, ranging from sandy soils in the west to tuffaceous soils, and even clayey and calcareous soils.
A special mention goes to "galestro," a type of local soil that also gives its name to a wine from the Chianti area.

Montepulciano

The landscape of this beautiful part of Tuscany is a continuous alternation of woods, evergreen oaks, and chestnuts, with fir trees in the higher areas, vineyards and olive groves on the gentler slopes. There are also parish churches, abbeys, castles, and small villages with distant Etruscan ancestry.

Here, wine still preserves its ancient peasant culture. In the vineyards around Siena, between San Gimignano, Montalcino, and Montepulciano, one finds the purest essence of Tuscany: that of great values, old houses marked by time and people who have lived there forever, wines with great personality and ancient flavor.

Montepulciano is a medieval town of rare beauty, an ancient village with Renaissance palaces, ancient churches, squares, and hidden corners. Walking through the streets of Montepulciano, one discovers not only the city but also the incredible view of the surrounding countryside, all covered with those fabulous vineyards that produce the famous Nobile wine. Amidst beautiful landscapes and perfect terrain for the production of excellent wines like Vino Nobile di Montepulciano DOCG, this area combines the traditional Tuscan charm with a more local character. The base of Montepulciano wine is the same as that of Chianti Classico, Orcia DOC, and Brunello di Montalcino: Sangiovese, also known as "Prugnolo Gentile." Why this name? Because it is the perfect wine, the wine of nobles and of all wines, the king.

Among the green hills and majestic forests of Tuscany, the winemaking tradition blends with ancient parish churches and Etruscan castles, keeping alive the ancient peasant culture.
