Production and refinement

The grapes come from old organic vineyards, facing east to capture the first light of the morning, which inspired the name of the reserve. The sandy soils, layered over compact clays, allow deep rooting, promoting the wine’s minerality and salinity.

The winery Cappella Sant’Andrea, located in Casale di San Gimignano, cultivates its vineyards following a sustainable approach, introducing animals such as donkeys, goats, and horses into the vineyard. These animals contribute to the self-production of compost and to the vitality of the soils. Harvesting takes place by hand at the end of September, selecting only the best clusters for fermentation.

Vinification is characterized by an artisanal approach that respects the terroir: the grapes ferment on the skins in terracotta amphorae for one month, allowing gentle contact that extracts aromas and complexity without forcing the structure. This is followed by 2 years of aging on the fine lees—during the first year in terracotta amphorae and the second in stainless steel—before bottling without filtration and a further 6 months of bottle aging.

This process gives the wine density, character, and minerality, while preserving an authentic expression of the grape variety and its territory.

Olfactory examination

On the nose it is complex and layered: fresh fruits and dried flowers can be perceived, along with notes of wheat, barley, and light peaty hints, accompanied by elegant mineral nuances.

In the land of Brunello and Chianti, it is not easy for a Tuscan area to stand out for the production of a white wine, yet San Gimignano has done so with great merit through its Vernaccia. The importance of the winemaking history in the San Gimignano area is evidenced by one key fact among many: Vernaccia di San Gimignano was the first wine to receive DOC status in 1966, alongside Est! Est!! Est!! di Montefiascone, Ischia Bianco, Rosso and Superiore, and Frascati.

Cappella Sant’Andrea winery, located in Casale di San Gimignano, embodies the diligent and proud spirit of a region with a strong winemaking vocation, expressed through the passionate and mindful work of Flavia Del Seta and Francesco Galgani. Their first harvest was in 2006, and their approach has always been—and remains—one of deep respect for the vineyard and the territory.

Flavia and Francesco see themselves as custodians of an ancient tradition and feel the weight of that responsibility. At Cappella Sant’Andrea, the guiding principle is sustainability: the conversion to organic farming is a natural extension of their philosophy, but it is not the only step in their journey. Cappella Sant’Andrea is, in fact, a place of harmonious coexistence, where the vineyard shares the land with donkeys, goats, and horses, under the universal sign of nature. The presence of animals enables the self-production of compost, used to enrich soil vitality.

The estate’s eight hectares of vineyards include, alongside Vernaccia, native Tuscan grape varieties and Merlot. The wines produced by Cappella Sant’Andrea are the bottled essence of the world Flavia and Francesco have created—a space removed from the frenzy of modern life, dedicated to healthy and respectful production.

Tuscany is one of the most important Italian regions for wine, famous worldwide for its renowned labels. Here, wine truly has been part of history and culture for centuries, as far back as the 14th century with the establishment of the "Lega dei Vinattieri" (Wine Merchants Guild).

San Gimignano is a town located in the Sienese hills, famous for its medieval architecture its towers that make it a popular tourist attraction. This area, in addition to being popular with tourists, is also renowned for its wines, particularly Vernaccia di San Gimignano, which was the first Italian wine to be granted DOC (denomination of controlled origin) status in 1966.

In addition to Vernaccia, the area also produces high-quality red wines, including Chianti Colli Senesi, Rosso di Montepulciano, and Brunello di Montalcino. In addition, the area is famous for the production of extra virgin olive oil, cheeses, cured meats, and other specialtyculinarie.

The Vernaccia di San Gimignano production area covers about 1,200 hectares and includes a series of hills southwest of Florence, which are cultivated by more than 200 wine producers.
The grapes are grown in limestone and clay soils, and the wine has a firm structure, good acidity and a floral aroma.

Secondo piatto appetitoso, non difficile da preparare, accompagnato generalmente con patate novelle e condito con olio, sale, pepe rosmarino, aglio, origano e un giro di olio. Può anche essere ripieno al suo interno, per una dose extra di sapore e morbidezza. Saporito ma non troppo strutturato, si presta a tanti abbinamenti. Una vera prelibatezza.
