Production and refinement

The Chardonnay grapes come from the highest vineyard on the estate, located at about 400 meters above sea level, with an east-southeast exposure on the hills above Rovereto. The vineyard is trained using the simple Trentino Pergola system, with a density of about 3,500 vines per hectare and low yields of approximately 80 quintals per hectare.
The soil is calcareous-silty in nature, extremely rich in skeleton and minerals such as porphyry, basalt, and slate, which give the wine a marked tension and savory depth. Harvesting is done by hand, with rigorous selection of bunches at optimal ripeness. The estate operates under organic farming practices, with a strong focus on biodiversity and vineyard sustainability, set within a unique ecosystem bordering the forest.

After a gentle whole-cluster pressing, the must is fermented with indigenous yeasts in stainless steel, without the addition of fermentation aids. Malolactic fermentation occurs spontaneously. The base wine is then bottle-fermented according to the traditional method (Metodo Classico), with the addition of yeasts and organic sugars.
Secondary fermentation is followed by a very long lees aging of 72 months, during which the wine develops aromatic complexity and a creamy texture. Disgorgement takes place without dosage (zero dosage), highlighting the pure expression of the terroir.

Organoleptic analysis

Visual exam

Intense, bright golden yellow, with an extremely fine, continuous, and creamy perlage, a clear sign of long lees aging.

Olfactory examination

On the nose it is broad, complex, and highly layered. It reveals notes of green apple and fresh citrus, followed by evolved aromas of bread crust, noble yeast, and ripe fruit. It closes with tones of candied citrus, hazelnut, and a pronounced flinty minerality.

Tasting

Dry and vertical on the palate, with remarkable precision. The attack is fresh and vibrant, followed by a creamy and deep structure. The long lees aging adds volume and complexity, while the zero dosage enhances tension, savoriness, and mineral purity. The finish is extremely long and saline.

Castel Noarna

The Castel Noarna estate is located in the hills of Trentino, within a historic setting of great significance whose origins date back to the 11th century. The castle and the surrounding vineyards now form a closed and highly distinctive agricultural ecosystem, where forest and vines coexist in natural balance.

The estate is managed according to an organic and artisanal philosophy, with the aim of preserving soil fertility, biodiversity, and the authenticity of the territory. The vineyards, covering a total of about 5 hectares, are considered a true monopole cru of Trentino’s Destra Adige area.

Trentino Alto Adige is a region entirely mountainous and divided into the autonomous provinces of Trento and Bolzano, whose border marks a linguistic and administrative watershed.

The attention of wineries and heroic viticulture ensures a consistently high quality level of wines, and particularly the best results are achieved with grapes that thrive in cold climates, such as Sauvignon and Pinot Noir, which here express their varietal characteristics at their best. In addition to the many international varieties, the region also boasts an interesting heritage of native grapes, including Teroldego, Schiava, and Lagrein.

Although it would be difficult to draw a morphological boundary between the two areas geographically, ethnic and linguistic differences on one hand and pedoclimatic differences on the other have also led, over the centuries, to a provincial characterization of wine production.

Both areas, however, share an excellent wine production, thanks also to the geographic position and favorable climatic conditions along the Adige Valley and on the slopes of the mountains that line it, as well as in the flat and hilly areas around Trento and Bolzano.

Trento

The Trento area, in addition to its Trento DOC sparkling wines, is famous for its elegant white wines, typical of grape cultivation in high-altitude terrain.

This territory is distinguished by elegant wines that express a unique concept of territoriality. The success and peculiarity of Trento DOC sparkling wine are due precisely to the characteristics of the territory: the combination of climate, different altitudes, terrain, and Trentino know-how make it not just a simple sparkling wine, but a highly esteemed mountain sparkling wine, increasingly recognized and awarded.

Despite its small size, the Trentino region is covered with 10,000 hectares of vineyards, with a percentage of grapes destined for sparkling wine production accounting for 8% and an annual production of 7 million bottles.

The vineyards benefit from different climates: from a mountain microclimate to the milder one of Lake Garda. Factors such as vineyard altitude and temperature variation play an important role in grape ripening, influencing the organoleptic characteristics of the wines.

The varieties cultivated for Trento DOC sparkling wine are Chardonnay and Pinot Noir. The area of organic vineyards in Trentino is steadily increasing, a natural consequence of the attention and responsibility of sparkling wine producers towards product healthiness.
