Production and refinement

The grapes come from Salento in Puglia, from vineyards trained mainly using spur-pruned cordon on medium-textured clay soils, with a good proportion of silt that contributes to the wine’s softness. Yields are around 80 quintals per hectare. Harvest takes place in mid-September, with hand-picking and careful selection of the bunches to preserve acidity and aromatic integrity, both essential for the fresh style of this rosé.

Winemaking involves a short skin contact maceration of about 2 hours in the press, just enough to obtain the typical pale pink color. This is followed by fermentation in stainless steel at controlled temperature to preserve the varietal profile of Negroamaro and its fruity character. Aging takes place exclusively in stainless steel for about 5 months on the fine lees, with the aim of maintaining tension, freshness, and aromatic purity.

Organoleptic analysis

Visual exam

Pale and luminous pink, crossed by violet reflections. The brightness is lively, with a fluid and smooth texture.

Olfactory examination

The bouquet is delicate, built on a fragrant aromatic profile. It reveals notes of fresh rose, crisp small red fruits such as wild strawberry and raspberry, followed by citrus nuances of orange and lime. In the background, a subtle mineral vein and a gently spicy touch emerge, recalling the typical character of Negroamaro in its rosé expression.

Tasting

The attack is fresh and linear, with good acidity that supports drinkability and extends its persistence. The palate is fruity and savory, with consistent echoes of red fruits and citrus. The structure is light yet well defined, with a clean finish, slightly saline and of good length, leaving a sense of balance and smoothness.

Petrelli

The Cantina Petrelli was founded in 1984 in the heart of Salento, a land suspended between the Ionian and Adriatic Seas, where viticulture is strongly influenced by the Mediterranean climate and the constant ventilation that characterizes the area. The project began with the passion of Paolo “Don Pepé” Petrelli, deeply connected to his land and to wine as an authentic expression of local peasant culture.

Since 1999, the winery has been led by his son Giovanni Petrelli, an oenologist and graduate in Agricultural Sciences, who has carried forward his father’s legacy, transforming it into a path of continuous technical and qualitative development. His management combines tradition and scientific training, with ongoing study, updating, and careful vineyard work, always keeping the identity of indigenous Salento grape varieties at the center.

The estate is made up of about 18 hectares of owned vineyards, mainly planted with Negroamaro, Primitivo, Verdeca, and Moscato, emblematic varieties of the region. The vineyards are managed in an almost family-like manner, where each vine is carefully tended to best express the relationship between soil, climate, and human hands.

Petrelli

The production facility is housed in the historic “Tenuta Fondo della Chiusa,” an ancient country estate dating back to 1850, now modernized to accommodate the winery without losing its original character. Here, between tradition and innovation, a production identity is consolidated that enhances the richness of Salento through wines that express its warmth, generosity, and winemaking vocation.

Today, the third generation, represented by Chiara Petrelli, continues this family journey, preserving and renewing a history built on work, territory, and absolute dedication to the vine.

Puglia

The introduction of viticulture in Puglia dates back to antiquity when the Greeks colonized the region and brought with them the culture of the vine. The cultivation spread further thanks to the expansion of the Roman Empire and Christianity, which promoted wine production for liturgical celebrations. Over the centuries, Puglian viticulture has evolved, with the cultivation of native varieties such as Primitivo, Negroamaro, and Bombino Bianco, becoming an important sector of the local economy.

Today, Puglia is one of the leading wine-producing regions in Italy in terms of hectoliters produced, with increasing attention to product quality and national and international recognition.

Puglian vines grow in sunny and windy areas, with a Mediterranean climate characterized by very hot and dry summers and mild but rainy winters.
These climatic conditions, combined with the vast coastal area with the breeze and the influence of the sea, create an ideal microclimate for vine cultivation. In particular, the strong temperature variation between day and night during the ripening months of the vine gives the grapes a unique and distinctive character.
The Puglian vineyard has been designed based on pedoclimatic conditions, and the native grape varieties cultivated here are able to adapt to the arid and stony soils of the region, which are typically limestone in the Salento area (where fresh and acidic wines are produced) and clayey in the north of the region (where production focuses on structured and tannic wines).

Salento

The Salento is the southernmost area of Puglia. The ancient Land of Otranto, famous for its millenary history closely linked to the Mediterranean Sea by which it is bathed. Salento is one of the regions in Italy where the winemaking tradition has deep roots, as quality wine has been produced here for 3000 years.

The warm climate and diverse soils are ideal places for vine cultivation. The main grape varieties are Negroamaro and Primitivo, from which full-bodied red wines are derived, and the famous Negroamaro rosé, a wine with intense color and pleasant freshness.
In Salento, the alberello technique is practiced, a vine training system shaped like a low tree, which allows for a greater expression of the terroir's characteristics.

An interesting fact: the art of "Taranta wine" is a traditional Salento practice in which winemakers sing and dance the typical regional dance (indeed, the tarantula) among the vineyards during the winemaking process, creating a festive and engaging atmosphere that involves locals and tourists alike.
