Production and refinement

The vineyards are located at around 300 meters above sea level, 15 km from the Adriatic and just over 20 km from the Apennines, benefiting from excellent exposure and a favorable microclimate.
The wine is made from 100% Pecorino, grown on clay soils and hand-harvested in the second week of September. The viticulture is organic, focused on respecting the soil and allowing the grape variety to express itself naturally.

Vinification is carried out as a white wine at controlled temperatures (16–18 °C) throughout fermentation. Periodic bâtonnage is performed until spring to maintain softness and structure. Eighty percent of the wine is aged in stainless steel and 20% in oak barrels for four months, preserving the aromatic identity of Pecorino.

Poderi San Lazzaro

Poderi San Lazzaro is a family-run winery located in the municipality of Offida, in the heart of Piceno Superiore.

Founded in 2003 by Paolo Capriotti and Elisetta Carosi, the estate spans 15 hectares of vineyards. The goal is to achieve the highest quality while respecting the environment and the natural rhythms of the vineyard. They have chosen organic farming in the vineyard, while in the cellar, they operate with minimal interventions to express the identity of the territory and grape varieties in their wines.

Poderi San Lazzaro

The vineyards are located 15 kilometers from the Adriatic Sea and just over 20 kilometers from the Apennines, with the plants growing at about 300 meters above sea level, enjoying excellent exposures and a microclimate suitable for viticulture. They cultivate Montepulciano, Sangiovese, Passerina, and Pecorino, interpreting them to the fullest without altering their characteristics.

They carefully follow every step in the cellar thanks to the compact and functional spaces. The result is excellent wines, among the best in the region, straightforward, without frills, of the highest quality.

Viticulture in the Marche has ancient roots dating back to Etruscan times, and over the centuries, it has become an important activity for the local economy, with medieval expansion of cultivation thanks to the Benedictine monks.
The fame of Marche wines spread throughout Europe in the 19th century, only to suffer a crisis due to competition from wines of other Italian regions. It regained prominence only in recent decades, thanks to the rediscovery of native varieties and the introduction of new cultivation and winemaking techniques.

Thanks to its pedoclimatic characteristics, the Marche is particularly suited to viticulture, although the climate varies greatly depending on the arrangement and altitude of the relief. In coastal and southern areas, the climate is Mediterranean, warmer and drier, while in the inland and northern areas, it is continental, with greater temperature variations and the risk of frost.
Soils also vary depending on the subzone: three types of soils can be identified – calcareous soils in the hilly areas, clayey soils in the flat valleys, and sandy soils in the coastal strip.

Offida

We are in the heart of the Piceno hills: lands of rare beauty where the vine has found a fertile home and speaks a diverse language: indigenous white grape varieties such as Trebbiano, Passerina, and the rediscovered Pecorino coexist with the delicate rusticity of Sangiovese red and the vigorous strength of Montepulciano black.

From the blend of the former comes Falerio and from the latter comes Rosso Piceno Superiore, both wines with a strong territorial vocation that now coexist with Offida DOCG and interesting single-varietal interpretations.

The territory is characterized by an early conversion to organic farming of the majority of the vineyard-dedicated lands and beyond, with agricultural work deeply oriented towards respecting nature: all this determines the quality of the wines from the Piceno hills. Here the climate is continental, characterized by cold winters and hot summers; the clayey soils express their maximum potential.

Trebbiano, Passerina, Pecorino blend with Sangiovese and Montepulciano, giving life to wines that reflect the beauty and diversity of this territory.
