Production and refinement

Born from an equal blend of Chardonnay, Pinot Noir, and Pinot Meunier, sourced from the Premier Cru vineyards of Trois-Puits, Montbré, and Taissy. The cool climate of the Montagne de Reims and the chalky soils, rich in active limestone, promote slow ripening and precise aromas, with slender clusters and grapes rich in natural acidity. The harvest, carried out by hand according to tradition, aims to preserve integrity and freshness—essential prerequisites for a cuvée of extraordinary balance.

Vinification takes place in stainless steel, with full malolactic fermentation—a choice that softens sharp edges without sacrificing tension and verticality. In the blending, wines from the most recent harvest are used predominantly, integrated with a portion of reserve wines that contribute to aromatic depth. The secondary fermentation follows the strict Méthode Champenoise, with 24 months of aging on the lees, which gives the delicate note of bread crust and the creaminess of the perlage.

Organoleptic analysis

Visual exam

In the glass, it shows a luminous straw-yellow color, crossed by a network of very fine, persistent bubbles that create a continuous and delicate movement, a sign of careful aging and perfectly executed secondary fermentation.

Olfactory examination

On the nose, it opens with white flowers and white-fleshed fruit, with nuances of ripe apple and pear, citrus accents, and an elegant hint of yeast reminiscent of brioche and bread crust. Balsamic aromas and a touch of minerality complete a classic and refined bouquet.

Tasting

The sip is fresh, crisp and dynamic, supported by a fine perlage that enhances the sense of liveliness. The structure remains slender yet firm, with impeccable balance between acidity, minerality, and a light creaminess that harmonizes the finish. It closes long and clean, with pleasant echoes of ripe white fruit.

Champagne

The vineyards of Champagne, stretching 150 km east of Paris, challenge the extreme conditions of the northern climate. Situated at the 49th parallel north, the grapes are cultivated with the help of the ocean's influence, which moderates the temperatures, and the extraordinary skills of the vignerons.

Average temperatures, just above 10°C, promote the slow ripening of the grapes, preserving their natural acidity. Despite the humid climate and frequent spring frosts, the region produces ideal grapes for Champagne, thanks to soils rich in chalk and other mineral components. The vineyards, spread over diverse terrains, extend across hills and plains, capturing the essence of the Mistral wind and the few hours of available sunlight.

Montagne de Reims

In the Montagne de Reims, we find a subsoil of chalk with layers of clay and lignite. Here, Pinot Noir expresses all its power in freshness, releasing scents of extraordinary elegance, with notes of currant and spices. Numerous houses, including Roederer, draw from these soils to create prestigious cuvées and vintage champagnes of great value, maintaining a centuries-old tradition in sparkling wine production.

In the area, nine villages boast the classification of Grand Cru:

Louvois,
Bouzy,
Ambonnay,
Verzy,
Verzenay,
Mailly-Champagne,
Beaumont-sur-Vesle,
Sillery,
Puisieulx.

Pinot Noir expressing all its power.

Recommended pairings and dishes

Matching by concordance

This cuvée finds ideal companions in equally elegant dishes that are not too structured, fresh and delicate, reflecting the wine’s aromatic profile: white flowers, pear, apple, citrus. Sushi, tartare, seafood salads, red mullet with pear and ginger or vegetarian dishes enhance the aromatic finesse of the Champagne without overpowering it, following a fresh, crisp and clean common thread.

Matching by contrast

You can play a lot with the freshness of this great Champagne, which is able to cleanse the palate after dishes that are typically rich, savory or aromatic. Its mineral note and fine perlage lighten the sensation of fattiness in preparations such as lard, vegetable lasagna, aged cheeses or dishes with soft sauces. The bright acidity also contrasts the natural sweetness of ingredients like pumpkin or shellfish, always restoring balance with the next sip.

It pairs well with

Elegant seafood dishes such as carpaccios, salmon or tuna tartare, seafood salads and shellfish, but it also proves surprisingly effective with vegetable-based first courses, pumpkin tortelli, mushroom risottos or cuttlefish ink risotto. Its subtle yet incisive structure allows it to pair well with high-quality cured meats, Colonnata lard and aged cheeses that aren’t too sharp. With lighter meats – quail, beef tartare, feathered game – it finds harmony thanks to its fine acidity and the creaminess of its perlage.
