Production and refinement

The Pinot Noir comes from vineyards located in the Côte de Nuits, within the prestigious Côte d’Or, home to some of the region’s highest and most ventilated crus. The predominantly limestone and marl soils impart freshness, minerality, and aromatic finesse to the wines.

The hand-harvested grapes undergo a week of cold maceration, followed by three weeks of fermentation in stainless steel. The wine is then aged for ten months in used 500-liter oak barrels—a choice that allows the varietal to express its pure character, free from excessive wood influence.

Domaine Dufouleur

Winemakers from father to son since 1596, the Domaine’s vineyards extend across the Côte de Nuits (within the Côte d’Or), including some of the region’s highest plots, capable of producing extremely compelling wines, especially in warmer vintages. The Nuit Saint Georges 1er Cru Les Poulettes represents one of the finest expressions of the Côte de Nuits vineyards. The winery itself is located in the heart of the Côte de Nuits, at the center of Burgundy’s vineyard landscape.

The estate, covering 28 hectares, is managed by Yvan Dufouleur, the eldest son of Guy, alongside his uncle Xavier Dufouleur.

Domaine Dufouleur

The appellations that make up their production range from the village of Fixin, in the northern Côte de Nuits, to the village of Santenay, in the southern Côte de Beaune.

Their philosophy is to offer discerning wine lovers a small range of carefully crafted wines of recognized high quality.

Burgundy

The pedoclimatic conditions of Burgundy, combined with the special savoir-faire of the vigneron, due to centuries of high-quality agronomic practices, result in a unique terroir. The care and specificity extend in this region to the definition of "climat," recognized by UNESCO. More selective than terroir, it refers to a single vineyard with specific characteristics of soil, climate, exposure, and cultivation methods.

The vineyards of Burgundy stretch for about 250 km from Chablis in the north to the Mâconnais, bordering the Rhône Valley, in the south.

The climate of Burgundy is predominantly continental, with slight maritime influences in the western area and Mediterranean influences in the southernmost part. Winters are cold, with fairly frequent frosts, sometimes even in spring; rainfall is minimal during the vine's budding period but intense between May and June, which can compromise flowering and thus the harvest.

The soil of Burgundy is formed from marine sedimentations mixed with limestone, marl, and clay, with limestone prevailing in the Côte d'Or, from Dijon to Chagny.

Côte de Nuits

Part of the Côte d’Or, the most famous area of Burgundy, the Côte de Nuits is the northern part (with Côte de Beaune to the south).

Côte de Nuits is renowned for its red wines from Pinot Noir but also has a small production of whites (made with Chardonnay, Pinot Blanc, and Pinot Gris). It is also divided into villages, each with their own designations. The most important villages are: Chambolle-Musigny, Fixin, Gevrey-Chambertin, Marsannay, Morey-Saint-Denis, Nuits-Saint-Georges, Vosne-Romanée, and Vougeot.

Among the Grand Crus of Côte de Nuits are: Bonnes Mares, Chambertin, Chambertin-Clos de Bèze, Clos de Roche, Clos de Vougeot, Grands Echézeaux, Musigny, Richebourg, Romanée-Conti, and La Tâche. At a lower level are Côte de Nuits Villages and Hautes-Côtes de Nuits.

Venison with Polenta

A dish with a bold and authentic flavor, spectacular when served with polenta and caramelized onions. Also worth trying in the soft and refined version with fillet.

Lasagna with Ragù

Lasagna is a classic dish of Italian cuisine composed of layers of pasta, béchamel sauce, ragù, and cheese, usually Parmesan or mozzarella. When prepared with care, lasagna presents a balance between the softness of the pasta, the creaminess of the béchamel, and the richness of the ragù. This dish is a comforting delight, suitable for all seasons and perfect for sharing with family and friends.
