Production and refinement

Bourgogne Hautes-Côtes de Beaune Bio comes from the hills of the Hautes-Côtes de Beaune, in the heart of Burgundy, a region with an extraordinary winemaking tradition. The vineyards are farmed according to organic principles, with particular attention to protecting the environment and preserving biodiversity. The soils are characterized by the presence of clay and limestone, which contribute to the wine’s freshness and mineral character. 100% Pinot Noir.

The winemaking process begins with a cold pre-fermentation maceration lasting approximately four days, helping to promote the extraction of aromas while preserving the wine’s fruity character. During the first four days of fermentation, manual punch-downs are carried out to encourage contact between the must and the skins, allowing for gradual and gentle extraction. Alcoholic fermentation takes place over approximately fifteen days. Part of the fermentation is carried out with indigenous yeasts and part with selected yeasts. The wine matures for approximately ten months: 40% in stainless steel, while the remaining 60% matures in oak barrels, approximately 20% of which are made from new oak. The use of oak is intended to add complexity and depth without overshadowing the varietal character of Pinot Noir.

Intense ruby red, with violet reflections.

Olfactory examination

The aromatic profile is dominated by red fruits, with notes of cherry and raspberry. Delicate floral nuances emerge, and as the wine evolves in the glass, light earthy notes and a more pronounced spicy character linked to ageing in oak come through. Excellent aromatic finesse.

Tasting

The entry is fresh and pleasantly fruity. The structure is elegant, supported by well-defined acidity and soft tannins that provide great balance. The fruity character returns on the palate with notes of cherry and small red berries, accompanied by a subtle minerality. The finish is harmonious, fresh and pleasantly persistent, with a beautiful, elegant close.

Château de Melin

A family-run winery, deeply rooted in the traditions of Burgundy. Arnaud Derats is the sixth generation of winemakers from the Maranges Valley. He chose to carry on the family legacy while giving the winery a new direction. In 2000, together with his wife Hélène, he acquired Château de Melin in Auxey-Duresses, opening a new chapter in the family’s history.

The management of the vineyards has progressively shifted towards a sustainable approach, ultimately leading to the adoption of organic farming, with the aim of preserving soil vitality, promoting biodiversity and maintaining a balanced relationship between the vineyards and the natural environment.

Château de Melin

The estate comprises approximately 26 hectares of vineyards, all located within Burgundy. Arnaud Derats and his family are committed to highlighting the distinctive characteristics of each individual vineyard through careful and respectful vineyard management.

The philosophy of Château de Melin is thus founded on the meeting of a long winemaking tradition and a contemporary approach to production, capturing the essence of Burgundy beautifully.

Burgundy

The pedoclimatic conditions of Burgundy, combined with the special savoir-faire of the vigneron, due to centuries of high-quality agronomic practices, result in a unique terroir. The care and specificity extend in this region to the definition of "climat," recognized by UNESCO. More selective than terroir, it refers to a single vineyard with specific characteristics of soil, climate, exposure, and cultivation methods.

The vineyards of Burgundy stretch for about 250 km from Chablis in the north to the Mâconnais, bordering the Rhône Valley, in the south.

The climate of Burgundy is predominantly continental, with slight maritime influences in the western area and Mediterranean influences in the southernmost part. Winters are cold, with fairly frequent frosts, sometimes even in spring; rainfall is minimal during the vine's budding period but intense between May and June, which can compromise flowering and thus the harvest.

The soil of Burgundy is formed from marine sedimentations mixed with limestone, marl, and clay, with limestone prevailing in the Côte d'Or, from Dijon to Chagny.

Côte de Beaune

The Côte de Beaune is an extraordinary region, stretching 26 km from Ladoix-Serrigny to Santenay. This region boasts a unique balance between Chardonnay and Pinot Noir grape varieties, with Chardonnay predominating in the Côte des Blancs and Pinot Noir more prevalent around Beaune and further south.

The diversity of the terroir in the Côte de Beaune is reflected in its wines, which represent some of the finest expressions of Chardonnay and Pinot Noir in the world.
