Production and refinement

The grapes, grown organically, come from the Grand Cru Kaefferkopf, the oldest Grand Cru in Alsace, located on south/southeast-facing slopes with granite and limestone soils. The parcels are between 25 and 45 years old. Organic vineyard management includes manual harvesting, controlled yields, careful selection of bunches, and attention to optimal ripeness, ensuring healthy and concentrated grapes. About 40% of the vines are on coteaux and slopes, while the remaining 60% are in flat areas, contributing to the wine’s complexity.

Winemaking involves manual harvesting and fermentation in wooden barrels and stainless steel, with temperature control to promote a long and steady fermentation. This approach enhances the aromatic expression of the Gewürztraminer, producing a rich, complex, and mineral wine. After fermentation, the wine ages on the lees in wood, maintaining a balance between softness and freshness.

A family-owned estate located in Ammerschwihr, in the heart of the Route des Vins d’Alsace, between Colmar and Kaysersberg. The Freyburger family has been cultivating the land for four generations, passing down passion, knowledge, and a deep respect for the terroir. Since 2019, the entire 8.5-hectare vineyard has been certified organic, reflecting the family’s commitment to sustainability and grape quality.

Nathalie and Christophe manage the vineyards with gentle, nature-respecting methods, favoring limited and targeted interventions: the vineyard is grassed every other row, the under-row is maintained manually or mechanically, and pest control is carried out using copper, sulfur, and natural infusions such as nettle, horsetail, and comfrey, applied in calibrated doses according to climatic conditions. This approach allows the roots to develop freely, enhancing the quality and complexity of the grapes.

The symbol of the Domaine, the dragonfly, represents elegance, finesse, purity, and harmony with nature—values reflected in every bottle produced. Harvesting is 100% manual, allowing for careful selection of the grapes and ensuring perfectly healthy and ripe fruit, in line with the constant care devoted to the vineyards throughout the year.

Domaine Freyburger combines tradition and innovation: while respecting the history of the region and ancestral winemaking methods, the family continually explores new ways to best express the character of their wines. The house’s Crémants are thus the result of a balance between terroir, biodiversity, and family passion, capable of conveying elegance, freshness, and finesse in every glass.

Alsace

Alsace is arguably the most famous French wine region in the world for white wines. It's a strip of land bordering Germany, historically contested between the two countries. Almost exclusively white grapes are cultivated here (including some of the most aromatic in the world: Gewürztraminer and Riesling) with which various styles of wines are produced. The only representative of red grapes in Alsace is Pinot Noir.

The climate is semi-continental due to its exceptional geographical location. The vineyards are shielded from oceanic influences by the Vosges massif, mostly facing south to southeast. The vines benefit from a dry microclimate, allowing for a long vine cycle and quality ripening of white grapes. A peculiarity of the region is the rapid variability of soils: an alternation of granite and limestone, with a myriad of solutions involving clay, schists, and gypsum, capable of offering the grape varieties much more subtle and intense aromatic nuances, fruity and mineral. Riesling, Gewürztraminer, Muscat d'Alsace, Pinot Gris, and Blanc for white berries, as well as Pinot Noir, are cultivated here.

Alsace is divided into two departments: Bas-Rhin, with Strasbourg as its capital, the northernmost area, and Haut-Rhin, to the south.

Upper Rhine

The Upper and Lower Rhine are two very different territories in terms of geographical, climatic, and cultural characteristics, and they are geographically separated by the eponymous river, which flows through several European countries. The Upper Rhine extends into Alsace, Switzerland, and Germany and is characterized by a continental climate particularly favorable to viticulture. This area, between Bergheim and Mulhouse, is the most suitable for viticulture, containing two-thirds of Alsace's vineyards.

The variability of the soils in the Upper Rhine, with an alternation of granite, limestone, and a myriad of combinations of clay, schists, and gypsum, offers the grape varieties subtle and intense aromatic nuances, both fruity and mineral.

Here, the dry and sunny autumns allow for the maximum concentration of sugars and aromatic substances in the grapes, with the possibility of late harvesting to produce Sélection de Grains Nobles, an incredibly fragrant and aromatic wine.
