Production and refinement

Vineyards are managed with simple Guyot pruning, working every two rows to promote root development and soil aeration, with thinning and manual grape selection to achieve perfectly ripe fruit. The blend, dominated by Merlot (90%) with small additions of Cabernet Franc and Pressac, produces a rich, harmonious, and well-structured wine, true to Bordeaux tradition.

In the cellar, vinification takes place in traditional concrete and stainless steel tanks, with 12 months of aging in concrete that preserves the purity of the fruit and imparts linearity and freshness to the structure, without the use of oak.

Chateau Canon Lalande Pomerol

We are in the Lalande-de-Pomerol appellation, on the right bank of the Dordogne in the Libournais, just north of Libourne. The vineyard lies on the Néac plateau, in direct continuity with the prestigious Pomerol plateau.

In 2019, Thierry Garnaud — after thirty-five years at the helm of Cheval Blanc — chose to embark on a new path: abandoning oak and pursuing purity. The vineyard soils are clay-limestone with a notable iron content, located at the highest point of the Néac plateau and just 800 meters, as the crow flies, from the renowned Château Petrus.

Chateau Canon Lalande Pomerol

The winery stands out for its tailor-made approach, enhancing the uniqueness of each individual parcel in the vineyard, while in the cellar it embraces innovative ageing methods, favoring traditional vessels such as concrete to highlight purity and identity. The result is a distinctive style, combining depth, authenticity, and character.

The estate covers a total of 21 hectares under vine.

Bordeaux

The Bordeaux region is one of the most important wine territories in the world. Not only does this region reach dizzying qualitative peaks, but it has consistently maintained those results, year after year, with top-notch quality.

Centuries of tradition and pursuit of quality have raised the bar and made Bordeaux wines famous: in 80% of cases, they are imposing red wines of remarkable structure and power, but there are also examples of botrytized or noble rot wines that complete the oenological panorama and elevate Bordeaux's reputation.

Bordeaux benefits from its proximity to the Atlantic Ocean. The climate is maritime: mild winters, cool summers, abundant precipitation but very well absorbed by the soil rich in stones, breccia, and sediments. The soils are highly variable on the surface, not particularly fertile, and covered by a thin layer of breccia, while the deeper layers are rich in minerals.

Regarding the classification, most wines are designated as Cru Bourgeois, but otherwise, there is no homogeneous system for the entire region.

Pomerol

The vineyard landscape of Pomerol extends over a plateau up to 40 meters above sea level, on the right bank of the Garonne River: it represents another excellence in the Bordeaux wine scene. Despite its modest size of only 800 hectares, this area produces some of the most renowned wines in the world. The Pomerol AOC is characterized by highly diversified soils, with clay, sand, and gravel, and by a myriad of small producers. Names like Petrus, La Conseillante, and l'Évangile stand out for their excellence.

Pomerol AOC predominantly features Merlot (with Cabernet Franc, Cabernet Sauvignon, and Malbec), resulting in wines with intense ruby or garnet hues, complex aromas of dark fruits, black truffle, leather, and licorice. Powerful and soft, they have tannins that allow them to be appreciated when young and also to age for decades. The Lalande-de-Pomerol AOC, with its clayey nature, presents a profile similar to Pomerol but with an even greater prevalence of Merlot. Wines here are balanced and structured, perfect for enjoyment after a few years of aging.

Recommended pairings and dishes

Matching by concordance

It should first and foremost be paired with dishes that are equally elegant and refined. It marries beautifully with preparations that match and echo its complexity: fragrant and intense dishes, ideally enriched with sweet spices, aromatic herbs, or a red fruit sauce, which enhance the lingering flavors of Merlot and Cabernet Franc.

Matching by contrast

By contrast, this great Bordeaux pairs beautifully with rich, fatty or protein-dense dishes such as succulent meats, flavorful cheeses, or game. Its acidity and tannic structure act as a counterpoint, cleansing the palate and balancing the fat, making each sip more vibrant and the tasting experience more dynamic and enjoyable.

It pairs well with

Roasted or grilled red meats, such as steaks, ribeye, or lamb, as well as slow-cooked red meat dishes; aged cheeses, which enhance its richness and structure.

Lamb with Truffle

Lamb with truffle is a simple yet flavorful main course, intensely aromatic and with a long-lasting taste. A truly satisfying dish.

Bœuf bourguignon

One of the great classics of French cuisine, regional to the Bordeaux area: a beef stew slow-cooked in Burgundy wine (ideally the same wine being tasted), with vegetables including pearl onions, carrots, and champignon mushrooms, and abundant aromatics. A fantastic way to bring the flavors of France to the table. A rich dish, full of aromas and flavors.
