Production and refinement

The vines are trained using the pergola system, a traditional method particularly suited to the steep slopes of the Cinque Terre and useful for protecting the clusters from direct sunlight.
Yields are about 70 quintals per hectare, deliberately kept low to enhance quality and aromatic concentration.
The harvest is carried out by hand, due to the extraordinary steepness of the vineyards, in September, with grapes collected in small crates and carefully selected directly in the vineyard—a practice essential in such a rugged and delicate terrain.

After harvesting, the grapes are vinified as a white wine in stainless steel tanks at controlled temperature, to preserve aromatic freshness and fruit purity. The wine ages in steel, as reflected in its fresh and maritime character, and then continues aging for several months in the bottle, allowing the bouquet to harmonize and develop greater complexity.

On the nose, it unfolds gradually with aromas of citrus, wildflowers, and Mediterranean aromatic herbs, accompanied by subtle saline and mineral hints that evoke rock and sea.

On the palate it is fresh, lively, and savory, with a balanced structure supported by good acidity. The mineral component adds depth and character, while the slightly bitter finish evokes the sensations of Mediterranean scrub and wild herbs. An unforgettable, exceptional wine.

Forlini Cappellini

The Forlini Cappellini winery is located in Manarola, a hamlet of the municipality of Riomaggiore, in the heart of the Cinque Terre National Park. In this extraordinary coastal landscape, where the mountains descend directly to the sea, vine cultivation has a millennia-old tradition and has over time profoundly shaped the territory, creating the famous system of terraces supported by dry-stone walls that characterizes the Cinque Terre landscape.

The Forlini Cappellini family carries on this tradition with great dedication. After the guidance of Alberto and Germana, today Giacomo and Alessia continue the work in the vineyard and cellar, passionately cultivating the three main local white grape varieties—Bosco, Albarola, and Vermentino—used to produce Cinque Terre DOC wines and the renowned local passito, Sciacchetrà.

Forlini Cappellini

The estate is a very small family-run operation, with just one hectare of vineyard spread across very steep terraced slopes. In these conditions, the use of machinery is virtually impossible, and every task, from pruning to harvest, is carried out entirely by hand.

Precisely because of the difficulty of working in the vineyard and the extreme conditions of the terrain, the winery has always participated in the “Vini Estremi” project, which highlights productions from areas where viticulture requires extraordinary effort.

The result is a limited but authentic production that faithfully expresses the character of Cinque Terre DOC: marine, mineral white wines that are intensely terroir-driven, deeply connected to the history and landscape of this unique corner of Liguria.

Liguria

Viticulture in Liguria has a long history dating back to ancient Rome. During the Middle Ages, the abundance of vineyards led to the creation of a thriving wine industry, especially along the coast. Over the centuries, viticulture has experienced ups and downs due to various diseases and climate changes. However, thanks to the passion and dedication of local winemakers, Ligurian winemaking has managed to survive and establish itself as an economic resource for the region, attracting visitors from around the world for tastings and wine tours.

The Ligurian climate favors viticulture due to its strategic geographic position between the sea and the mountains. The temperate Mediterranean climate allows the vines to grow slowly, developing complex and distinctive aromas and flavors that are then found in the wines. However, in this area, farmers often face sudden rains and periods of intense drought.

Another challenge for Ligurian winemakers is the orographic conformation, which has required the development of agricultural techniques such as terraced cultivation and manual grape harvesting. In the Ligurian hills, the soils differ depending on the area. Coastal soils are mainly composed of marine sediments and sand, giving the wines a note of freshness and salinity. Inland soils, on the other hand, are more clayey and calcareous, giving rise to fuller-bodied and structured wines.

Ligurian wines are a hidden treasure, appreciated for their uniqueness and quality, the result of the variety of soils, microclimates, and grape varieties used. Ligurian winemakers mainly produce fresh and aromatic white wines, but there are also full-bodied and intense red wines.

La Spezia

The climate is Mediterranean, with strong daily and seasonal temperature fluctuations, which favorably conditions the aromatic complement of the grapes. The vineyards rise from sea level to over 500-600 meters, where, even on the hottest days, humidity is mitigated by cool sea breezes, which definitely limit fungal attacks on the grapes. The limestone-rich soils of the western slope provide the wines with good minerality, while the clay soils of the eastern slope impart structure and softness.

The grape varieties grown are mainly albarola, bosco, ciliegiolo, sangiovese and vermentino.
The most famous and important appellation is the Cinque Terre and Cinqueterre Sciacchetrà DOC, which includes the three subzones Costa de Campu, Costa de Posa and Costa de Sera DOC.
