Production and refinement

The Chablis AOC comes from 100% Chardonnay grown on the region’s typical limestone and marl soils. The vineyards benefit from a continental climate with cold winters, long summers, and favorable temperature variations. Harvest is carried out mechanically at full ripeness, ensuring the grapes are healthy and perfectly mature, ready to express the character of the terroir.

After harvest, the grapes are vinified in stainless steel at controlled temperatures to preserve freshness and aromatic notes. The wine is then aged on its lees, without the use of oak, to highlight its characteristic minerality and pure fruit expression.

Chaude Ecuelle

We are in northern Burgundy, in the Chablis region, in a village called Chemilly-sur-Serein. The name Domaine de Chaude Ecuelle comes from a prestigious “lieu-dit” located south of Chablis, where many of the estate’s vineyards are situated, divided into numerous individual plots. Their vineyards are meticulously tended and produce grapes that, in addition to being of the highest quality, impart mineral and briny notes to the wines thanks to the limestone-rich soils.

The entire Vilain family is involved in both viticulture and winemaking, helping to convey and showcase the distinctive characteristics of Chablis across their 20 hectares of vineyard.

The pedoclimatic conditions of Burgundy, combined with the special savoir-faire of the vigneron, due to centuries of high-quality agronomic practices, result in a unique terroir. The care and specificity extend in this region to the definition of "climat," recognized by UNESCO. More selective than terroir, it refers to a single vineyard with specific characteristics of soil, climate, exposure, and cultivation methods.

The vineyards of Burgundy stretch for about 250 km from Chablis in the north to the Mâconnais, bordering the Rhône Valley, in the south.

The climate of Burgundy is predominantly continental, with slight maritime influences in the western area and Mediterranean influences in the southernmost part. Winters are cold, with fairly frequent frosts, sometimes even in spring; rainfall is minimal during the vine's budding period but intense between May and June, which can compromise flowering and thus the harvest.

The soil of Burgundy is formed from marine sedimentations mixed with limestone, marl, and clay, with limestone prevailing in the Côte d'Or, from Dijon to Chagny.

Chablis

This area is located about 180 kilometers south of Paris and just 40 kilometers south of Champagne. The climate is continental, with cold winters and springs, and risks of spring frosts.

In Chablis, only white wines from Chardonnay grapes are produced. These wines are fresh and often characterized by mineral notes, with hints of flint derived from the characteristics of the soils. Chablis wines are generally fermented and matured in steel tanks, a technique that makes them very distinctive and different from the Chardonnays of central Burgundy, which instead have toasted and vanilla notes.
