Production and refinement

Rosa-ae comes from historic vineyards planted in 1972 and 1995 at 250–300 meters above sea level, at the foot of Monte Camicia in Loreto Aprutino. The vines are cultivated according to organic farming principles, using Abruzzese pergola and spur-pruned cordon systems. The clay-limestone soils, combined with sea breezes and the temperature variations from the Gran Sasso peaks, give the Montepulciano elegance, freshness, and minerality. Harvesting is done manually and in stages, cluster by cluster, selecting only perfectly healthy grapes.

In the cellar, the wine is produced using three complementary techniques: half by bleeding the red grapes after a cold pre-maceration, a quarter by direct pressing of whole, uncrushed grapes, and a quarter by cold maceration on the skins. Fermentation takes place in stainless steel at a controlled temperature (15–16 °C), without selected yeasts or invasive interventions, preserving aromatic purity. After fermentation, the wine ages for 6 months in steel, maintaining freshness, fragrance, and a balance between softness, acidity, and minerality.

Torre dei Beati

Torre dei Beati is a beautiful Abruzzese winery focusing on high-quality, region-specific wines. A family-run business founded in 1999, the winery has always adhered to a philosophy of natural winemaking, producing organically and respecting the environment. This is one of the oldest and most significant communes in the Pescara province, located in a gently sloping landscape with a prime position for viticulture, where the terroir is exceptionally suited.

They cultivate 21 hectares, situated 25 kilometers from the Adriatic Sea, on the first rolling hills of clay-limestone soil, rising towards the 3,000-meter peaks of Gran Sasso d’Italia, the highest summit of the Apennines. The vineyard's location ensures daily influence from the temperate sea air during the day and cool mountain breezes at night, particularly during the final month of maturation when the region often experiences early snowfall.

Torre dei Beati

Torre dei Beati was founded in 1999 by Adriana Galasso and Fausto Albanesi. The Montepulciano vines were planted about forty years ago by Adriana’s father.

Today, after more than a decade of harvests, Torre dei Beati is a small but highly regarded winery, dedicated to preserving the purest Abruzzese traditions. Their wines are elegant and fresh, true expressions of the Abruzzo terroir, thanks to a meticulous and sustainable management approach that respects the land. Montepulciano and Pecorino, blending ancient and modern, are the result of bold choices, driven by a deep love and passion for winemaking.

Abruzzo

Abruzzo is a very diverse and interesting region, both in terms of the wines produced there and in terms of regional gastronomy.
The presence of vines here dates back to Roman times, and like in many other parts of Italy, the logic of immediate profit was pursued, prioritizing quantity over quality. A decisive change in direction would have to wait until the second half of the 20th century, when the first initiatives aimed at pursuing excellence in agri-food and Abruzzo winemaking began to prioritize quality production and the rediscovery of native grape varieties.

Abruzzo is predominantly mountainous or hilly, bounded to the north by the Tronto River, which marks the border with the Marche, to the east by the Central Apennines which divide it from Lazio, to the south by the Trigno River, beyond which lies Molise, and to the west by the Adriatic Sea.
To the west, we have the mountainous area formed by the Monti della Laga, Gran Sasso, and the Maiella Massif, which gently slopes down to a sub-Apennine hilly area, reaching the Adriatic.

The climate of the region is mild, especially on the Adriatic side.
It becomes more continental as you move inland and with increasing altitude. The average level of precipitation is good, less on the coast and greater inland.

Montepulciano d'Abruzzo

Montepulciano d'Abruzzo is a wine whose production is permitted in the four Abruzzo provinces (Chieti, L'Aquila, Pescara, and Teramo).

The strong agricultural vocation has shaped the territory over the centuries. Traditional cultivation of olive groves and vineyards alternates with vegetables, crops, and stretches of still wild scrubland, while formations of gullies contrast with a predominantly gentle hilly landscape favorable to human settlement, as archaeological finds testify to stable human presence as early as 4500 years before Christ.

Industrialization and urbanization have so far spared the beauty of these areas, and agriculture remains the main activity. The territory extends to the north of the region, between the altitudes of Gran Sasso and the Adriatic coast; the landscape is enchanting, thanks also to meticulously cared-for vineyards. The soil structure and excellent microclimate favor the production of a wine with peculiar organoleptic sensations, suitable for aging. The flagship wine is Montepulciano d'Abruzzo (from the homonymous Montepulciano grape).

Montepulciano d'Abruzzo, the result of the millennia-old agricultural vocation of the four Abruzzo provinces, stands out for the enchanting landscape of its vineyards, where tradition and nature harmoniously blend.

Fried chicken

Fried chicken is a crispy and golden dish, prepared by dipping pieces of chicken in a batter or breading and frying them until achieving an irresistible texture. The outer crust is seasoned and flavorful, while the inside remains juicy and tender. Popular in many culinary traditions, it varies in techniques and flavors, from Southern Fried Chicken in the U.S. to Japanese karaage. Best enjoyed hot, it is often served with sauces, fries, or coleslaw. The contrast between crispiness and tenderness makes it a beloved comfort food worldwide.
