Production and refinement

This Brut Millésime Blanc de Blancs is produced exclusively from Chardonnay grapes, carefully selected from the most suitable parcels of the Vallée de la Marne. The vines grow on clay-limestone soils, with deep roots that allow them to extract minerality and tension. Harvesting is carried out by hand at full ripeness, ensuring intact and perfectly healthy clusters. The organic and responsible approach protects biodiversity, minimizing chemical interventions and preserving the vineyard’s natural balance.

After harvest, the grapes are immediately selected and gently pressed to obtain a clear, fragrant must. Fermentation takes place in stainless steel to preserve freshness and aromatic purity. The secondary fermentation according to the traditional method allows for the formation of fine, persistent bubbles. The wine ages on the lees for at least five years, during which it develops creaminess, complexity, and depth, without losing the mineral precision derived from the clay-limestone soils.

In the glass, the Blanc de Blancs appears a bright pale yellow, with a very fine and persistent perlage rising in steady columns.

Olfactory examination

On the nose, delicate floral notes of acacia and white flowers emerge, accompanied by fruity hints of lemon and banana. A light smokiness adds complexity and depth, while the bouquet as a whole remains refined, harmonious, and luminous, typical of the classic Champagne tradition.

Tasting

The vineyards of Champagne, stretching 150 km east of Paris, challenge the extreme conditions of the northern climate. Situated at the 49th parallel north, the grapes are cultivated with the help of the ocean's influence, which moderates the temperatures, and the extraordinary skills of the vignerons.

Average temperatures, just above 10°C, promote the slow ripening of the grapes, preserving their natural acidity. Despite the humid climate and frequent spring frosts, the region produces ideal grapes for Champagne, thanks to soils rich in chalk and other mineral components. The vineyards, spread over diverse terrains, extend across hills and plains, capturing the essence of the Mistral wind and the few hours of available sunlight.

Vallée de la Marne

The vineyards in the area take root in marl, clay, and limestone hills. Here, Pinot Meunier is produced, contributing to the legendary Champagnes of the region with fruity acidity and hints of pear, apple, and pine nut. Major houses like Moët & Chandon and Roederer oversee these vineyards, while small cooperative wineries preserve their territorial character. However, it is through the work of independent vignerons that the true essence of this territory is captured.
