Production and refinement

The vineyards, organically grown with low Guyot training at high planting density, rest on soils composed of silt and pebbles, which impart freshness and a distinctive mineral character to the wine.
The harvest is manual, with careful selection of the grapes both in the vineyard and in the cellar.

The Pinot Noir is vinified with 50% whole clusters, a choice that enhances aromatic complexity and tannic finesse. Alcoholic fermentation, spontaneous with indigenous yeasts, takes place in stainless steel vats for about 17 days, with 5–7 daily punch-downs and pump-overs. After pressing, the wine settles for two weeks before moving to oak for aging: 30% new barrels and 70% used barrels of 1–3 years. Maturation lasts 14 months in wood, followed by 3 months in vats before bottling, which is carried out without fining or filtration to preserve its integrity.

Olfactory examination

On the nose, it reveals great finesse: red fruits and wild berries (cherry, raspberry, redcurrant), floral notes of peony and fresh rose, gentle spices, and mineral accents reminiscent of the undergrowth.

Tasting

On the palate, it is refined, vibrant, and elegant, with velvety, perfectly integrated tannins, a fine acidity that supports the sip, and a long, mineral finish, typical of the Côte de Nuits terroir.

David Duband

Domaine David Duband is located in Chevannes, in the heart of the Côte de Nuits. Its story begins in 1965 with Pierre Duband, who planted the first 15 hectares of vineyard, entrusting the harvest to the Beaune cooperative, as was common at the time. In 1991, his son David decided to vinify on his own, starting with just one and a half hectares, with the goal of personally interpreting the terroir.

Over time, with the support of François Feuillet, the estate expanded to include prestigious parcels such as Clos de la Roche, Charmes-Chambertin, Morey-Saint-Denis Clos Sorbé, La Romanée, Chambertin, and Latricières-Chambertin. Today, it encompasses around twenty hectares of vineyards, cultivated under certified organic practices, with great attention to biodiversity and soil management.

David Duband

Since 2008, Duband has introduced the use of whole clusters in fermentation, a technique that imparts finesse and structure to his Pinot Noirs, emphasizing freshness and aromatic complexity rather than mere concentration. The winery’s style combines tradition and modernity, producing wines that focus on fruit purity, precision, and elegance. His wines are featured in top-tier restaurants, including several three-Michelin-star establishments, attesting to their international recognition.

The winery’s success is also linked to Duband’s ability to highlight the diverse terroirs of the Côte de Nuits, sensitively interpreting each climat and offering wines that express liveliness, character, and elegance. Since 2014, a Wine Club has been in place, offering exclusive tastings and previews for enthusiasts.

The pedoclimatic conditions of Burgundy, combined with the special savoir-faire of the vigneron, due to centuries of high-quality agronomic practices, result in a unique terroir. The care and specificity extend in this region to the definition of "climat," recognized by UNESCO. More selective than terroir, it refers to a single vineyard with specific characteristics of soil, climate, exposure, and cultivation methods.

The vineyards of Burgundy stretch for about 250 km from Chablis in the north to the Mâconnais, bordering the Rhône Valley, in the south.

The climate of Burgundy is predominantly continental, with slight maritime influences in the western area and Mediterranean influences in the southernmost part. Winters are cold, with fairly frequent frosts, sometimes even in spring; rainfall is minimal during the vine's budding period but intense between May and June, which can compromise flowering and thus the harvest.

The soil of Burgundy is formed from marine sedimentations mixed with limestone, marl, and clay, with limestone prevailing in the Côte d'Or, from Dijon to Chagny.

Côte de Nuits

Part of the Côte d’Or, the most famous area of Burgundy, the Côte de Nuits is the northern part (with Côte de Beaune to the south).

Côte de Nuits is renowned for its red wines from Pinot Noir but also has a small production of whites (made with Chardonnay, Pinot Blanc, and Pinot Gris). It is also divided into villages, each with their own designations. The most important villages are: Chambolle-Musigny, Fixin, Gevrey-Chambertin, Marsannay, Morey-Saint-Denis, Nuits-Saint-Georges, Vosne-Romanée, and Vougeot.

Among the Grand Crus of Côte de Nuits are: Bonnes Mares, Chambertin, Chambertin-Clos de Bèze, Clos de Roche, Clos de Vougeot, Grands Echézeaux, Musigny, Richebourg, Romanée-Conti, and La Tâche. At a lower level are Côte de Nuits Villages and Hautes-Côtes de Nuits.
