Chateau St. Julian Analogie

Chateau Saint Julian Analogie is a small but historic winery located in the Entre-Deux-Mers, near the Abbaye Bénédictine de La Sauve Majeure, in the commune of Targon, in the heart of the Bordeaux region. The estate is part of the larger La Grangere property and boasts many years of experience in vineyard management and winemaking.

The Arnaoud family has passionately run the winery for generations, meticulously caring for the 20 hectares of vineyards, considered among the finest terroirs in the area. The winery’s philosophy combines tradition and innovation: classical viticulture and winemaking techniques coexist with modern tools and targeted investments in the cellar, aimed at enhancing wine quality and fruit purity.

Since 2009, under the direction of Alexi Bentejac, Chateau Saint Julian has been transitioning to organic farming, pursuing a more sustainable approach that respects the terroir. The winery’s goal is to highlight the unique characteristics of its vineyards, producing wines that are balanced, elegant, and representative of Bordeaux’s oenological heritage.

Chateau St. Julian Analogie

The vineyards are carefully tended using techniques such as leaf thinning and shoot tipping, aimed at promoting optimal ripening of the clusters, while the choice of clay and silt soils contributes to giving the wines structure, depth, and minerality. Production is characterized by meticulous attention to detail, from grape harvesting to vinification in temperature-controlled stainless steel tanks, and aging designed to enhance the elegance and roundness of the wines without compromising freshness and aromatic finesse.

Chateau Saint Julian Analogie thus represents a synthesis of family tradition, artisanal care, and a modern vision of viticulture, producing Bordeaux Rouge Superior wines that fully reflect the richness and complexity of the Entre-Deux-Mers terroirs.

Bordeaux

The Bordeaux region is one of the most important wine territories in the world. Not only does this region reach dizzying qualitative peaks, but it has consistently maintained those results, year after year, with top-notch quality.

Centuries of tradition and pursuit of quality have raised the bar and made Bordeaux wines famous: in 80% of cases, they are imposing red wines of remarkable structure and power, but there are also examples of botrytized or noble rot wines that complete the oenological panorama and elevate Bordeaux's reputation.

Bordeaux benefits from its proximity to the Atlantic Ocean. The climate is maritime: mild winters, cool summers, abundant precipitation but very well absorbed by the soil rich in stones, breccia, and sediments. The soils are highly variable on the surface, not particularly fertile, and covered by a thin layer of breccia, while the deeper layers are rich in minerals.

Regarding the classification, most wines are designated as Cru Bourgeois, but otherwise, there is no homogeneous system for the entire region.

Entre-deux-mers

A beautiful sub-region located 80 km southeast of Bordeaux. Its name means "between two seas," but in reality, it denotes the territory between two rivers, the Garonne and the Dordogne. It offers a wide variety of quality wines and is home to beautiful vineyards, making it one of the oldest wine-producing areas in France.

The region has diversified terroirs with mixed soils and many wooded areas. For this reason, Entre Deux Mers differs from most Bordeaux designations with a variety of soils ranging from gravel and clay to limestone and sand, resulting in many wine styles.

Mostly dry white wines are produced from Sémillon, Sauvignon Blanc, and Muscadelle, but Entre-deux-mers is also known today for the production of high-quality red wines.

The area comprises nine AOCs, which are: Entre-Deux-Mers AOC, Premières Côtes de Bordeaux, Sainte-Croix-du-Mont AOC, Cadillac AOC, Loupiac AOC, St-Macaire AOC, Graves de Vayres AOC, and Sainte-Foy-Bordeaux AOC.

The name means "between two seas," indicating the territory between two rivers, the Garonne and the Dordogne.

Pork chops

Pork chops pan-fried are an easy-to-make main dish, full of flavors and aromas, with a rich texture and a fatty tendency. Additionally, they are very quick to prepare. They can be cooked in a skillet, on the grill, or in the oven. Enhance them with rosemary for an extra touch of flavor.

Sausage and Mustard Greens

"Salsiccia and sanapo" is an intense dish from Sicilian tradition, typically prepared for the feast of San Martino. It features "senape canuta," a pleasantly bitter wild mustard green. The richness and roundness of the sausage blend harmoniously with the slight bitterness of the greens, creating a perfect flavor combination.
