Production and refinement

The Riesling comes from a vineyard of approximately 0.8 hectares located at an altitude of 700 metres, on very steep terraced slopes supported by substantial dry-stone walls. The vineyard faces south. The soil is of glacial moraine and schist origin, stony, poor, permeable and low in limestone, characteristics that ensure good drainage and contribute to the wine’s mineral character. The vines are trained on trellises, with a density of approximately 8,500 vines per hectare. Yields are around 60 quintals per hectare. The grapes are harvested by hand in early October, with selection carried out directly in the vineyard.

The grapes undergo gentle pressing followed by traditional white vinification. Fermentation takes place in stainless steel at a controlled temperature. The wine then matures in stainless steel for approximately seven months, with the aim of preserving the freshness and aromatic character of the Riesling. Ageing in stainless steel enhances the purity of the fruit and the distinctive minerality of the terroir.

Organoleptic analysis

Visual exam

Bright, intense straw yellow.

Olfactory examination

The aromatic profile is intense and refined, with notes of white peach, tropical and exotic fruit, citrus and flowers. Hints of freshly cut hay, alpine herbs and a mineral character that reflects the mountainous nature of the terroir also emerge.

Tasting

The palate is fresh, savoury and well balanced, with vibrant acidity that supports the wine and enhances its persistence. A slight residual sweetness contributes to the overall balance without weighing the wine down. An elegant, vertical Riesling, characterized by good harmony, minerality and a long, vibrant finish.

Trentino Alto Adige

Trentino Alto Adige is a region entirely mountainous and divided into the autonomous provinces of Trento and Bolzano, whose border marks a linguistic and administrative watershed.

The attention of wineries and heroic viticulture ensures a consistently high quality level of wines, and particularly the best results are achieved with grapes that thrive in cold climates, such as Sauvignon and Pinot Noir, which here express their varietal characteristics at their best. In addition to the many international varieties, the region also boasts an interesting heritage of native grapes, including Teroldego, Schiava, and Lagrein.

Although it would be difficult to draw a morphological boundary between the two areas geographically, ethnic and linguistic differences on one hand and pedoclimatic differences on the other have also led, over the centuries, to a provincial characterization of wine production.

Both areas, however, share an excellent wine production, thanks also to the geographic position and favorable climatic conditions along the Adige Valley and on the slopes of the mountains that line it, as well as in the flat and hilly areas around Trento and Bolzano.

Alto Adige

The Alto Adige is a highly suitable area for the production of quality white and red wines of finesse.

The vineyards of Alto Adige are located at an altitude ranging from 200 to 1000 meters, and the vines grow on very diverse terrains.

The indigenous variety Lagrein, for example, prefers warm, gravelly, or sandy soils, while the local Gewürztraminer grape expresses itself best on clayey and very calcareous soils. Unique are the stony soils of dolomitic limestone, mainly found in the southern foothills of the Wine Road, originating from the famous UNESCO World Heritage site, the Dolomites. Thanks to their mineral characteristics, these warm and highly permeable soils are ideal for producing full-bodied white wines with a pronounced flavor.

Alto Adige, with its vineyards situated between 200 and 1000 meters above sea level, offers quality white and red wines of finesse.

Recommended pairings and dishes

Matching by concordance

An aromatic white wine that calls for equally fragrant and intense dishes. The fresh, mineral and aromatic profile of Riesling pairs by analogy with fish, vegetable and seafood dishes. Its mineral character naturally complements oysters, shellfish and mildly flavoured fish.

Matching by contrast

The freshness and savoury character of Riesling make it an excellent contrast pairing for dishes with a rich or oily component, such as grilled fish, white meats and certain crustacean-based preparations. The acidity helps cleanse the palate and balance the succulence, while the wine’s savoury character complements delicate dishes with a certain degree of structure. It is also particularly well suited to Asian cuisine, where the wine’s freshness contrasts with the spicy and aromatic character of the dishes.

It pairs well with

Seafood appetizers, oysters, shellfish, crustaceans, seafood pasta dishes, baked fish, grilled fish, raw fish, sushi, salmon tartare, vegetable dishes, white meats, spicy Asian cuisine, lightly aged cheeses.
