Production and refinement

The harvest is carried out manually around the first ten days of September to preserve the freshness and aromatic integrity of the grapes. The vineyard, facing southwest, ensures perfect ripening with optimal exposure to the sun and Mediterranean breezes.

The winemaking is carried out in white, with fermentation in stainless steel tanks and large oak barrels. The aging lasts about six months in wood and an additional four months in bottle, allowing the wine to develop balance, aromatic depth, and a subtle complexity from the wood without masking the freshness of the fruit.

Organoleptic analysis

Visual exam

Intense golden yellow, tending toward amber, bright and luminous.

Olfactory examination

On the nose, delicate aromas of acacia, peach, mango, and lychee emerge, with a subtle slightly dried undertone and harmoniously integrated woody notes.

Tasting

On the palate, it is fresh, crisp, and round, with a balance of softness, acidity, and minerality that provides persistence and pleasure. A white wine with character, whose sapidity evokes the sea.

Salvatore D'Amico

An important agricultural company on the island of Salina, Salvatore D’Amico, in addition to producing capers and olive oil, creates excellent wines with native grape varieties. These are labels of the highest quality, authentic expression of the territory that evoke dreams of Sicily.

Three and a half hectares are dedicated to vineyards in the Valdichiesa district, cultivated organically, with plants that reach forty years of age and produce genuine and flavorful grapes, from which wines faithful to the terroir are obtained.

Salvatore D'Amico

From its vineyards, the company produces four labels, true oenological gems: wines of great value, the result of hard work in the vineyard and great wisdom in the cellar. The company practices heroic viticulture, with terraced vineyards cultivated through the restoration of centuries-old dry stone walls, along which caper plants also grow spontaneously.

Sicily

Sicilian wine territory is now considered a true continent, thanks to its pedoclimatic variability and rich biodiversity. It is located in the center of the Mediterranean and in the so-called "northern sunbelt," an area between the 30th and 50th parallels north and the 30th and 40th parallels south, where the best conditions of brightness and temperature for vine cultivation are found.

On the smaller islands, given the high temperatures and windy conditions, the typical training system is the "alberello" and its "mixed" versions (for example, on the island of Pantelleria), as well as the "Tendone" system. In the rest of Sicilian territory, however, more than half of the vineyards use espaliers and contre-espaliers. In Sicily, wines with a long history are born, such as Marsala, but also fragrant dessert wines like Passito di Pantelleria and Malvasia delle Lipari, not to mention Moscato di Noto and numerous robust red wines and interesting white wines. There's also Nerello Mascalese, climbing the slopes of Mount Etna.

Salina Island

In Sicily, in a territory rich in history, art, and culture, as well as ancient winemaking traditions, there is a green gem in the Aeolian archipelago: the volcanic island of Salina.

Viticulture is one of the main agricultural activities on the island, with a long tradition of producing fine wines. In particular, Salina Island is famous for the production of Malvasia delle Lipari DOC, a sweet and aromatic wine mainly made from Malvasia delle Lipari grapes. This wine was recognized as a controlled designation of origin (DOC) in 1971 and is considered one of the oldest wines in the region.

The vines are cultivated on the terraces along the island's coast, thanks to the fertile volcanic soil and sea breeze that contribute to creating an ideal microclimate for grape cultivation. The island is characterized by rich biodiversity, including many endemic plants that can influence the aromatic profile of the wines.

Amidst the Aeolian archipelago, the volcanic island of Salina shines like a green pearl, celebrated for its ancient winemaking tradition.
