Production and refinement

After a gentle pressing, the must ferments in temperature-controlled stainless-steel vats, fully preserving freshness and primary aromas. The process includes both alcoholic and malolactic fermentation, the latter carried out to provide natural roundness and balance.

The wine ages for several months in large wooden casks, a gentle step that adds complexity and depth without compromising the grape’s vibrancy. The winemaking approach focuses on expressive clarity, floral character, and a linear, precise palate.

It shows a pale, bright straw yellow color, reflecting its youthful freshness and the refined profile typical of Aligoté.

Olfactory examination

Domaine Regnaudot

We are in Maranges, a small and charming wine enclave that marks the natural junction between the Côte-d’Or and Saône-et-Loire. It is a territory balanced delicately between Burgundian refinement and a more rustic, mountainous character—a place where vineyards climb the slopes and the air carries the scent of limestone and tradition.

Maranges, located west of Santenay toward Couchois, is not just an appellation: it is a quiet, authentic microcosm, far from the bustle of Burgundy’s more famous areas, yet capable of producing wines of strong identity. Here, in 1996, Bernard Regnaudot arrived, bringing with him the heritage of a family of winemakers of which he represents the third generation. With a calm and reserved character, Bernard has over time built a deep connection with these hills, working with discretion and dedication, never seeking the spotlight.

Domaine Regnaudot

Over the years, the new generation has come to support the estate: son Florian, endowed with a modern sensibility and attentive to the natural rhythms of the vineyard, and daughter-in-law Marion, passionately involved in the estate’s daily activities. Together, they form a close-knit trio, considered the true driving force behind this tiny yet precious Burgundian appellation.

Today, the domaine spans 6.5 hectares of vineyards, a mosaic of plots tended with artisanal care, where every agronomic choice is designed to enhance the identity of the terroir. Here, viticulture is a practice of continuous observation, measured gestures, and respect for both the vine and the environment. The result is a limited production that tells the story of Burgundy in its most authentic form.

Burgundy

The pedoclimatic conditions of Burgundy, combined with the special savoir-faire of the vigneron, due to centuries of high-quality agronomic practices, result in a unique terroir. The care and specificity extend in this region to the definition of "climat," recognized by UNESCO. More selective than terroir, it refers to a single vineyard with specific characteristics of soil, climate, exposure, and cultivation methods.

The vineyards of Burgundy stretch for about 250 km from Chablis in the north to the Mâconnais, bordering the Rhône Valley, in the south.

The climate of Burgundy is predominantly continental, with slight maritime influences in the western area and Mediterranean influences in the southernmost part. Winters are cold, with fairly frequent frosts, sometimes even in spring; rainfall is minimal during the vine's budding period but intense between May and June, which can compromise flowering and thus the harvest.

The soil of Burgundy is formed from marine sedimentations mixed with limestone, marl, and clay, with limestone prevailing in the Côte d'Or, from Dijon to Chagny.

Côte-d'Or

Côte d’Or stretches from Dijon to Santenay: it is the most prestigious area of Burgundy, where wines classified as Bourgogne Premier Cru and Bourgogne Grand Cru are produced. It is divided into two sub-regions: Côte de Nuits to the north is famous for its red wines from Pinot Noir and white wines from Chardonnay; Côte de Beaune to the south is renowned mainly for its excellent white wines. Both sub-regions are divided into various villages, each with their own designations, with the Grand Crus representing the pinnacle of quality.

The Côte de Nuits Villages and Hautes-Côtes de Nuits offer wines of excellent quality; in Côte de Beaune, Grand Crus such as Montrachet and Corton-Charlemagne are among the most renowned. The Côte de Beaune Villages and Hautes-Côtes de Beaune designations are characterized by higher altitudes and lesser exposures.
