Production and refinement

Fermentation takes place in stainless steel at controlled temperature; the second fermentation occurs in the bottle according to the Traditional Method, followed by a long aging on the lees in the bottle of at least 30 months (up to 96) without disgorgement, with zero dosage (Brut Nature). The extended aging gives this sparkling wine a fine and persistent perlage and a highly elegant aromatic complexity.

The grapes, hand-harvested from old estate vineyards located in the "Serral del Vell" vineyard on limestone soils, are cultivated according to the strict principles of biodynamic and organic farming, without the use of chemical insecticides or herbicides, promoting biodiversity and natural integration within the landscape.

Recaredo

Recaredo is a winery located in Penedès, Catalunya, founded in 1924. Since 2006, it has practiced biodynamic and organic farming certified by Demeter, eliminating chemical fertilizers, herbicides, and synthetic pesticides. The vineyard covers about 50 hectares spread across various parcels, with limestone-rich soils abundant in minerals, particularly in the "Serral del Vell" cru.

Harvesting is done manually to preserve grape quality, sourced exclusively from old estate vineyards. Vinification involves fermentation in stainless steel at controlled temperatures and long aging on the lees in the bottle, up to 96 months. The disgorgement is done manually without freezing the neck, and the dosage is minimal or zero (brut nature/dosage zero).

Recaredo

Recaredo is part of Corpinnat, an association of producers promoting high-quality organic sparkling wines with a strong connection to their territory and without mass distribution.

Penedès

The Penedès is one of the main wine regions of Catalonia, located between Barcelona and Tarragona. Its geographical position makes it a unique territory, with direct influence from the Mediterranean Sea and the Catalan Pre-Coastal Range. The region is divided into three subzones based on altitude: Baix Penedès (plains), Alt Penedès (hills), and Penedès Superior (higher areas), where the coolest and most suitable vineyards are found. The soils are mainly calcareous-clay, well-draining, with marls and sands. The climate is Mediterranean, with hot summers, mild winters, and significant temperature variations in the hilly areas, ideal for preserving acidity and aromatic qualities in the grapes.

Viticulture in Penedès is distinguished by the increasing adoption of organic and biodynamic practices, with a strong focus on sustainability. The most representative varieties are the native Xarel·lo, Macabeo, and Parellada for white grapes, and Trepat and Sumoll for red grapes, alongside international varieties such as Chardonnay, Pinot Noir, Cabernet Sauvignon, Merlot, and Syrah. Historically recognized as the cradle of Cava, today Penedès is experiencing a renewal focused on producing top-quality traditional-method sparkling wines, such as Corpinnat, made from careful hand selection, in-house vinifications, and very long aging on the lees.

Alongside sparkling wine production, there is growing attention to still wines, particularly those made from pure Xarel·lo, capable of expressing the territory authentically and evolving positively over time. Penedès thus presents itself as a technically advanced yet tradition-rooted region, a European reference for those seeking gastronomic, terroir-driven sparkling wines, produced artisanally and in limited quantities.

Catalonia has a long-standing tradition linked to Cava, created in 1850, and has established itself as a leader in quality wine production, particularly sparkling wine. Today, it is the second-largest wine-producing region in Spain, with over 5.5 million hectoliters produced.

The climate is Mediterranean, warm, and arid inland, with predominantly sedimentary and calcareous soils. The key grape varieties include Macabeu, Parellada, and Xarel·lo for Cava, and Garnacha, Monastrell, and Tempranillo for red wines.

The 10 Catalan DOPs (Denominaciones de Origen Protegidas) include Priorat, the only DOQ, and the Catalunya DOP covering the entire region. The main wine regions are:
